I'm try bto book a B&B that kaydee has mentioned (Mas Perreel is booked) in the Luberon area.
After making my request this returned:
"nous avons une chambre pour deux personnes les 30.31 et 1er juin le tarif est de 70€ en 1/2 pension par personne merci de reprendre contact pour faire la réservation au plaisir lydia"

I read that suggesting rooms with breakfast and dinner at 70 euro per person (we are requesting 2 rooms for 4 people).

Their website doesn't state that they are 1/2 pension or nothing, so I sent an email requesting one night with dinner and the other two rooms only.
She responded with:"c'est ok pour deux chambres les 30.1.2 juin
vous pourrez diner chez nous le 1 ou le 2 juin
merci de réserver le soir des dinner ,
pour confirmer merci de reprendre contact
au plaisir"

I then sent:
"Bonjour vous Remercier. Quel est votre taux quotidien par la pièce ? Votre site web dit 65 à 90 euro. Nous planifierons le 30 mai comme le dîner. Je suppose que votre prix-répare est 25-40 euro par la personne. Est-cela correct ? Nous choisirons des dîners supplémentaires sur l'arrivée. Nous attendons avec impatience rester avec vous. Confirmons cette réservation. Merci Jim"

I then received this:"nous avons actuellement des chambres libres nous proposons aussi un tarif en 1/2 pension en promotion à partir de 5 nuitées nous vous rappelons que nous ne prenons pas les cartes de crédit merci de nous contacter".

I am having a difficult time translating this. I'm reading 5 nights with 1/2 pension. I could sure use some help. My French is so much worse than my Italian (which isn't all that good) and I don't want to exasperate what seems like a very nice lady.

Hi Jabez,

It means that they have a special rate for
bookings of 5 nights and over. Credit cards are
not accepted.

There will be a supplement for dinner. You can only have dinner there on June 1 and 2 (not on May 30). They ask that you make a reservation for the meals by giving them the date(s).

The rate is 70€ per room.

Jim,
She is promoting but not cramming down your throat the demi-pension option. She said: "nous proposons aussi un tarif en 1/2 pension en promotion à partir de 5 nuitées." To me it means she is saying by "aussi" she has this other option that is a good deal, if you are staying 5 nights or more, not that you must stay 5 nights on half-board basis. It is probably a "lettre type - standard letter".
On the other hand, many b&b's need the guests to decide several days - or even a week - in advance about whether they are opting for the table d'hôte, and not at the last minute upon arrival. This is a reasonable thing to ask, considering that it is not a restaurant but a private home that is offering meals, and not on a daily basis.
To put your doubts to rest, you may want to specify as follows:
- date, room + dinner (for X number of persons),
- date, room only.
etc.
Making things clear for your landlady should not irk her; in fact it is helpful to her.
Lastly, Jim, your French may not be Proust but it is understandable. Don't worry. How "fluid" is your English?

Jim 'Demi pension" usually means your accomodations plus a meal included in that price, be it breakfast,lunch or dinner, in this case dinner. It looks like she would have a discounted price for you if take all your dinners there.Could be worth it, but then again it restricts you from having the freedom to dine elsewhere.

I'd say 1/2 pension (half board) is breakfast PLUS dinner.
