My husband is celiac, or gluten-intolerant. This means allergic to wheat,barley, oats and rye. He also is allergic to eggs. I would like to politely relay this information to either server or chef when we dine out in Paris. Sauces, so common in France, are risky as they do sometimes do include wheat flour or egg. How to ask without offending? Why miss out on a marvelous dish that you "guess" might contain wheat when we could, with the proper phrase, ask the chef and be certain?
If I say "Mon mari est allergique au gluten," or "Il est coeliaque," will they understand what I need to know? Perhaps, "Il ne peut pas manger farine du ble?"

allergique aux oeufs!, par ailleurs il est allergique à (ou) fait une intolérance au seigle, à l'orge et à l'avoine.
(I shouldn't really be posting on this forum, because of course French isn't a "foreign language" where I live...)
It is tricky, eating in restaurants. There are plenty of things you could make sauces from (can your husband eat water-chestnut flour - very nice, from Chinese shops) but usually French sauces have a roux base unless they are simply a reduction (boiled-down, concentrated).
