Sounds like a most interesting journey. Turkey has some of the friendliest people. Roads are good so renting a car a good option - in Cappa, not in Istambul. Both have enough going on to keep you occupied. In Cappa consider a "cave hotel", they are actually quite modern and comfy. In Istambul we stayed in the Sultanahmet area and were very pleased. I had a really strange visit to Egypt about 30 years ago...I won't get into why it was such, but I enjoyed the Khan el Khalili a lot (the main bazaar). I went only at night, which I think gave it an even more exotic feel.
The Suez Canal was pretty impressive; you might want to consider that too.
