Nancy, I'm sure that there are many to choose from. I see you live in Houston. Are you specifically interested in travelling somewhere? What time of year? Universities are a good place to start. Off the top of my head, I know that the NYU School of Continuing and Professional Studies offers intensive courses during the summer (and maybe at other times). You can also search the SlowTrav message board for previous discussions of language schools.

In Los Angeles, CA, UCLA Extension has a great 4 day weekend immersion class. It's given 9-4:30 Saturday and Sunday for 2 consecutive weekends each quarter. I took it last year a few weeks before my vacation and it was excellent. The teacher who always gives the class is a native speaker, well traveled and very approachable.
