Oh My! This is hard! I'm not very sure about the expression "Speak for yourself" but it sort of makes sense to me.... We say "... sarai tu" as a reply when someone offends you: "Ignorante!!!" "Ignorante sarai tu!" It means: YOU are the one that is ignorant! I have to admit that the "Fondente sarai tu!" phrase is a bit obscure in Italian too.... though!

I would take it as "You will be the dark chocolate" Sarai = you will be When it is sarai Tu! it is an imperative You will be!

Thanks Cristina That's the way we took it sine you are right "sarai" is future tense fim. you will be. Guilia our friend who works in the Perugina Museo thought it a bit of a strange usage too because you are right it is often used in "come backs" as you said ? Yesterday we had needed to go go for chocolate for a christmas gift for Barbara's daughter so we asked her and she tried to explain it but it didn't make much sence unless "you will become the chocolate too" Thanks ART

I think it may help to realise that fondente - the word itself - does not literally mean dark chocolate. It is the present participle of the verb fondere which means to melt. The full name for the dark chocolate is cioccolato fondente as opposed to cioccolato al latte which doesn't melt so easily in your mouth. so, I think that the phrase means that you will like the cioccolate so much that you also will be in a melting state! (Ti piacera' tanto che) fondente sarai tu! Vasco

On the Eurochocolate website, they say that the "fondente sarai tu!" section of the fair has been thought for those who prefer the milk chocolate over the dark one.
Thus I would think Giulia got it right in her first post.
Think about a sentence like this: [I doubt it is in proper English, still I hope you can follow my phrasing]
"If ever there is a dumb {whatever} here, you * are the one!(not me )"
* Please, note that you here means one
" you are the one" is rendered as "sarai tu!"
Why the future tense?
Just to let you a small way out to escape your almost-certain destiny:
sarai tu, ma forse no (comunque e sicuramente non io).
"Fondente sei tu!" would have been too strong.
The meaning is that you a are a fondente supporter while I'm not, and I despise a little fondente supporters.
It is also a joke about the Italian passion to embrace factions: Guelfi o Ghibellini, Firenze o Siena, Pizza alta o Pizza bassa, Destra o Sinistra,...
...Cioccolato al latte o fondente.

So looking at the quotes from the website it would seem to be a phrase that a lover of cioccolato al latte might say to a lover of cioccolato fondente, attempting to look down on them as an inferior species! In other words - you're the one who loves cioccolato fondente not me! - in an attempt to raise the status of cioccolato al latte.
Lesson to be learned here I think: always try and translate a phrase in context, because words and phrases can have very different meanings in different contexts.

My two cents: "Fondente sarai tu!" in this instance means that the fondente fans will melt (with pleasure, presumably) from the taste of the ciocc al latte at Eurochocolate. Per esempio: "Il nostro cioccolato al latte e' cosi incredible fondente sarai tu!"
