Hi Robert! Please submit them as restaurant reviews, but you can add good detail to the reviews about the regional food. I think more people use the reviews list than use our restaurant list pages.

It might be a good idea for us to have some descriptions of regional differences for food. If you could write up something on Sicily, I could start a page about that - I will look for volunteers to write about some of the other regions.
