I recently sent a PM to 2 people, then wanted to add a 3rd person. Is there a way to do this? I couldn't figure it out, so I ended up cutting and pasting the original messages, then closed the first PM and started a new one with all 3 people. Was there a better way???

Unfortunately, I don't think so. I haven't been able to find another way to do this either.

I was thinking about this a while ago. Maybe the logic here is that the message is Private, and adding someone else could potentially violate that privacy.

You cannot add a person to a PM once it has been started and probably for the reason Marian states.
