I ate again at Spring, not long ago. Had the tenderest pigeon in my life, and I have had pigeons galore. Jo&Den described the inventiveness and excellence of the cuisine and the "complicité" of the dining atmosphere to a T. And yes, dining in the tiny place does curiously give one the sure feeling that one has enjoyed a very rare, precious experience that one will boast of years from now. David and I tried to compare that dinner with our previous fabulous dinners there. We agreed that the best meal seems always to be the last meal. As usual, ended the dinner on the right top note - standing at the kitchen counter tasting wines with chef Daniel Rose. Don't forget to book wayyyyy in advance (3 months). Lastly, unlike Jo&Den, we never spend more than 100 euro for two chez Spring (39 euro for the menu, + wine). Excellent value for the experience.

Questions about Spring (hopefully Jo or Americana can answer) Is it true they are only open Tues-Friday? True they only take reservations via phone and not email?

Kristina, Yes on both counts. They are also open for lunch on Thursday and Friday. For lunch the wait is less long. You only need to book a week or two in advance. By the way, now everyone is asked to come at 8h30pm. The diners are now very "disciplined". I think everyone arrived around the same time, around 8h30pm, and dinner was served shortly afterwards.

Hello Jo I want to thank you for sharing your trip with all of us. I got up every morning and turned the computer on to see what exciting things you had done during the day. We were just in Paris in April thus I especially loved to read your blog. I am presently on day 20 of my trip report. I have never done anything like this before! If mine is at least half as interesting as yours, I will be happy  . Thanks again Jo Sandy PS I just turned 48 too!

Chris, is he on slow travel, how would I PM him? Thanks Chris and Sandy for your comments on my blog, now does anyone know how I can get paid to write and travel!! I loved blogging and am looking forward to doing it again. Also, I don't have to come home and write a long trip report, it's already done (though I will get in my apartment review and some restaurant reviews when I get a chance) BTW, a local radio station interviewed me this morning on my Robert Plant sighting after Den sent them an e-mail to squash rumoured Led Zepplin reunion plans based on my first hand information! Jo

Jo I also wanted to let you know how much I enjoyed your blog, I think it is just great that you were so willing to take the time necessary to share your experiences & thoughts with us all! We are also a canadian couple from Montreal in our early 50s who are looking forward to our first France trip this september with the first 5 days in Paris so each day I anxiously awaited to see what you had been up to. Thanks! (I'm sure we will have many early nights as well)
