Hi everyone...
I traveled to Athens and the Greek islands of the Dodecanese last fall. One of the best things I had to eat there was zucchini chips, sort of like potato chips. They were always served as part of the spread of appetizers. I thought they were zucchini sliced very thin and possibly coated with olive oil and salt, and then baked or dried.

Now it is zucchini time and I would love to reproduce that dish. Does anyone have any idea for a recipe? Thanks. Linda

We had them in Spain this winter. They were cut like French fries. DELICIOUS!

I don't have a recipe, but I would line a cookie sheet with tin foil. Spray pam. Cut zucchini in circles (easier!) Brush with olive oil, sprinkle salt, spices (whatever you like) and bake at 450 (my oven. yours may need less). When top looks done, remove. Because of the spray (I use pam) the bottom is always more done than the top, so be careful. Have fun. Enjoy!

This week I did this with yellow zucchini, but this time I cut in three large pieces, which I halved and baked skin down. Was it good! Less calories, too!
