We have rented apartments many times in Switzerland and always do it through the tourist office. It seems that they have every single listing for the area. I just went to
www.interlaken.ch but the website wasn't working. But, if you have talked to the tourist office, then you have covered this.
I have not found many agencies for Switzerland (besides Interhome which usually has boring looking apartment buildings) and Drawbridge to Europe who I used once who has some listings. I have them on my Switzerland page:

The tourist departments rate them by star level and there are lots of 4 star listings. The tourist office for Meiringen also covers Brienz on the other end of the lake from Interlaken. Perhaps this is a possibility?

I just received a good review of apartments in Grindelwald. They are 4 star and are on the main street, but at the end just past the busy area. I will be posting the review soon.
