I was just cleaning out the e-mails that accumulated while we were on vacation and found one from Fine Cooking all about Vacation Home Cooking. It would appear though that some of their ideas for cooking in a vacation are somewhat complex! Big Grin

There are some good recipes there! That corn and avocado salad sounds delish - I just printed it out. Thanks for posting this, Jerry.

We should start a thread about all the snafus we've hit when cooking in a vacation rental. Roll Eyes

As does the tomato salad with feta and mint.

Printing . . .

Thanks, Jerry.

My idea of vacation cooking involves more slicing and dicing, than turning on the heat.

Well my friends and I go backwoods camping very frequently, and we have the art of of cooking in a dutch-oven, quite down-packed. One year, we grabbed some goodies out of the freezer to make an apple-crisp. She thought she brought frozen apples, instead when we opened them they were frozen TURNIPS Eek so we ended up creating a crisp with bananas and applesauce....quite unique actually. Every year now we we camp, we laugh over the turnip-crisp! Happy

My mother used to be the queen of camp cooking. 4 course meals (including mashed potatoes and gravy!!) from a two burner coleman stove.

In Italy the Rosticerria and markets have so many wonderful one or two step items. I remember a ravioli stuffed with pear and gorgonzola you could buy at the market. We just grabbed some sage and butter and heated it up. Along with a roasted chicken it was fantastic.

Maybe we should start posting our camping/vacation cooking recipes?

We've had a few threads about cooking in vacation rentals:

Cooking for Travelers

Cooking simply in italian rentals

Quick and easy meals

Recipe swap

Many of them contain a link to Judith's pages on the Slowtrav main site.
