We are new to the slow travel website and although have introduced ourselves on the new people forum we though we’d introduce you to some of our food as well... Below is a vegetarian snack that is easy to make and is great for mid morning snacks, light lunches or even pre party nibbles... It is classic tapa in the bars of Spain...
Potato Tortilla
A traditional Spanish tortilla contains potatoes and onions. Other ingredients can be added to the basic egg mixture, but it is generally accepted that the classic tortilla cannot be improved...
Ingredients (serves 6)
450g / 1 lb small potatoes, peeled
1 large onion
45 ml / 3 tsb vegetable oil
4 eggs
Salt and freshly ground black pepper
Parsley, to garnish
1. Cut the potatoes into slices and the onions into rings.
2. Heat 30ml / 2 tsb of the oil in a 20cm / 8 in heavy based frying pan. Add the potatoes and the onion and cook over a low heat for about 10 minutes until the potatoes are just tender. Remove from the heat.
3. In a large bowl, beat together the eggs with a little salt and pepper. Stir in the potatoes and onion.
4. Heat the remaining oil in the frying pan and pour in the potato onion and egg mixture. Cook for 5-8 minutes until the mixture is almost set.
5. Place a large plate upside-down over the pan, invert the tortilla on to the plate and then slide it back into the pan. Cook for 2 or 3 minutes more until the underside is golden brown. Cut into wedges and serve, garnished with parsley.
