I have been following the slow travel blogs each week for the fabulous recipes you all have been making from Gina's book. I have recently acquired the book and look forward to lots of delicious baking.

I have come upon "00" flour here, which is a rarity, and would like to "stock up". Does anyone know whether it is possible to keep in the frig for any reasonable amount of time (how much?) or whether even it may be frozen (and then for how long would it keep?)

Appreciate any and all suggestions and answers.

I found this article on the topic. It says that you can indeed freeze flour, in an unopened package, wrapped in plastic.

Growing up in Norway, we always had large quantities of flour around and they kept just fine in the pantry - but Norway is of course very cool and the air is rather dry, which is not the case all over the world!

My mom always kept flour (in tupperware) in our extra fridge to keep it fresh for 3-4 months.

No need to refigerate. It's dried already! Just pack it in a sealed container or bag, so that it does not catch any moisture or bug. If properly packed it will keep for a year.

I keep mine in the freezer as our humidity here in Florida is too heavy to leave it out, even in a dry container. We get 'critters' too easy in items down here.

I finally found it after all these years (my other thread on this page)
