Normally, I keep well away from the Food Forum - I know nothing about any of this!! But, now I need your help. A year last spring we were in Austin Texas for a few days and went to some excellent breakfast places recommended by Sally Watkins and Elizabeth (they both live in Austin). There is an egg breakfast dish that is popular there - made with corn chips!! I had heard of it (in some Brad Pitt movie where the character is an American living in the middle east and this was the food he missed) - but had never seen it on a menu. We had it in Austin.
My question: What is it called? Anyone have a good recipe?
Migas come with many optional additions -- they always begin with eggs and tortillas, and can include mushrooms, sausage, bacon, and cheese. We have friends who don't eat eggs, and make migas with mashed tofu. This is actually better than it sounds if lots of seasoning is added. Hope the Taco Xpress recipe turns out -- this place has great food! Elizabeth
I recognize this recipe as a variation of "migas," which you find served in Tex-Mex restaurants in Central Texas. Instead of tortilla strips, we use crumbled tortilla chips (they soften when added to the eggs) and white onion instead of green. Much easier, and just as tasty!
MEXICAN SCRAMBLED EGGS 12 eggs 1 teaspoon salt 1/2 teaspoon pepper 1/4 cup vegetable oil 4 5-to 6-inch corn tortillas, cut into 2x1/4-inch strips 1/4 cup chopped green onions 1 tablespoon minced seeded jalapeño chili 1 cup shredded Monterey Jack cheese 1 cup chopped seeded tomatoes 1/3 cup chopped fresh cilantro
Whisk eggs, salt and pepper in large bowl until well blended. Heat oil in 12-inch nonstick skillet over medium-high heat. Working in batches, add tortilla strips; cook just until softened, about 15 seconds per batch. Drain on paper towels. Add green onions and chili to skillet; stir 2 minutes. Reduce heat to medium. Add eggs and tortilla strips to skillet and stir until almost set, about 4 minutes. Add cheese, tomatoes and cilantro. Stir until eggs are set and cheese melts, about 1 minute. Serve immediately.
