Here was supper tonight.
Diced pancetta and browned to a dark color in a skillet with a finely chopped clove of garlic. Sauted small shrimp in the pancetta drippings. Drained and set aside to cool to almost room temperature.

Made a Peach Vinaigrette dressing. And tossed it in fresh greens with diced peaches and sliced tomatoes.

Plated the salad and topped with the pancetta and shrimp; some more fresh peach; and sprinkles of gorgonzola.

Ohhh.. that sounds yummy. I know you probably don't want another sweet peach recipe, but I really like this Honey Glazed Peach Tart with Mascarpone Cream.

Since the peaches are yellow fleshed instead of white, I didn't feel I had to be a purist. So I made bellini's the other night with peaches and raspberries. *hic*.

I only have 3 peaches left. With all the great ideas you guys have, I'm now thinking of going to pick more! I'm crazy.

I'm just cutting the fresh peaches into slices and eating them with oatmeal cookies. And buying peach ice from our local Sicilian ice cream shop.

Do you have peaches growing in your yard? If so , I envy you! Fresh, good peaches are hard to beat, this time of year.

Hi Ann, this thread is subsequent to my original where I was soliciting recipes for the 20 pounds of peaches we picked last Sat. at a pick-your-own place near us. The thread title is "Savory or Spicy Peach Recipes?"
I WISH I had peaches growing in my yard!Smile

MPR: (my peach recipe)

Peaches sliced in half, in a baking dish, topped with a bit of butter, brown sugar and pinoli, in the oven for a half hour at 200C, top with fresh cut mint.

Oh, ONE MORE (this is really Piemontese):
Sliced Peaches in Moscato wine, that's it...kind of like peach soup. Awesome.

ours our coming in droves..pesche limone, pesche giallo, pesche bianco, i love having a peach orchard but the canning and jam making is getting to me. and the tomatoes are starting to take over the farm....
