I just made my sherbet, and I have to tell you, it's the best sherbet I've ever tasted. I'll be posting my photo tomorrow, but I had my dad over tonight, and he really loved it, too. Very refreshing, and of course, coconut and pineapple are made for each other.
All I need is a pineapple! I'm hoping to get it made by Friday morning since we are going to San Diego for a wedding this weekend. Glad to hear it's delicious.
mmmm! I'm headed out of town tomorrow for several days, but this will *definitely* get made when I get home! I love pina coladas, and am really looking forward to tasting this sherbet.

Terry, your beautiful picture made me go to the china cupboard and see what treasures we might have - I found something belonging to David's grandmother that might work out here when I get the mixture frozen tomorrow. I have to say that the taste from the blender was very good indeed - felt like our Cabo vacation all over again.
I am sharing today because we are going off for the weekend. And I confess to shamelessly borrowing the teacup idea from Terry because once I found this one with the yellow roses, I knew I had to put the fabulous sherbet in it. I doubt David's Scottish/Canadian grandmother ever used this teacup for ice cream .
Love the teacup idea. I'll be stealing it down the road. I have a collection of more than 75 china tea cups and saucers.
My mix is in the fridge chilling. I'm going to put it in the icecream freezer first thing in the morning so I have time to get it in it's containers to harden while I'm at the International Festival.
Planning to serve it in a half coconut shell with a little paper umbrella. Still don't know what I'll bake, though.

WOW. Could this have been any easier? I bought already cut up pineapple at Trader Joe's so pretty much all I had to do was open a can. I think the hardest thing was going to the store!
It tastes awesome and later I will bring some down to the Vine and also serve some at a neighborly BBQ in the backyard tonight. I have a feeling everyone is going to love this - since it is a cocktail in a bowl. Maybe I will pour a rum chaser on it.
Just scooped mine. Very tasty. I love the flavor, but I think maybe a little too sweet. Next time if my pineapple is really sweet like this one, I might try cutting back on the sugar a little.\

Deborah-Yours looks very festive. I decided that I wouldn't make any accompaniments to mine this week. I made another batch of "Tribute to Katherine Hepburn" brownies last night-I was perfecting the recipe, then I've been in the kitchen all day today making this month's Daring Baker's Challenge. That item will be on my blog at the end of the month.
Wow this is the best tasting sherbert I have ever had and so easy to make!!! I also bought the cutup pineapple as the price difference was minimal. I will make this again.
Everyones photos look great. The teacups are lovely but I esp like the coconut.
I'm not sure mine is as yellow in color.I just looked at it again and it looks like mine is an albino! Ughh oh!
I haven't made mine yet, but I cut up a pineapple and it is deliciously sweet. I'd like to cut back on the added sugar, but I'm wondering if less sugar might have an effect on the consistency. Any thoughts?
