I love Barley, and I am wondering if anyone has any favorite recipes to use barley other than in soup. Thanks!

I have been enjoying barley soup with vegetables this week, and thinking that I would like to make some barley recipes. Kim's recipe sounds delicious! Thank you!

I love barley!

There is a recipe I make that i will have to think through in order to post it. It's winter food to me and we don't do much winter anymore.

It's chicken baked with barley, mushrooms and chopped tomatoes.

I could have MDH read the recipe to me, but he should be on the way to the airport as we speak!

Another recipe I saw on the Foodfit.com website was barley risotto, with mushrooms and winter squash. I tried to copy it here but the site wouldn't let me.

Our family has enjoyed "Tuscan Oven Grains and Greens" from epicurious. It's a great winter dinner. Make sure to add extra broth and get some good crusty bread. Even my picky boys liked it.
