All this bread making has made me remember that one of my favorite breads is sourdough. They made it in a restaurant back home in Michigan and served it with a great salad that they dressed with their own in house made blue cheese dressing, which was probable the best I have ever tasted.
Anyway has anyone made sourdough bread and do you have a favorite recipe?
Ginger, unluckily I haven't even ever tried sourdough... all I know about it is that, as it's made with no added yeast, the caracteristics of the bread strongly depend on the place where you make it, so probably Michigan sourdough will be different to Florida sourdough... I'm curious to read other opinions!
I've made it, although not for a long time. Here's an excellent article about making your sourdough starter. I cheated with mine by boosting it with a little commercial yeast. Actually, one of my theories about the "bread that ate the internet" no-knead bread is that it's almost a sourdough sponge. I think that since I've been letting it rise in the same place, and I make a new batch every other day, I'm getting great fermentation because of a colony of wild yeast in the air.
I had a sour dough starter years ago. We used it for bread, pancakes, cookies and all kinds of goodies. I left it with a friend when we were moving back to the states.
I've tried to grow a new one from scratch~ but have never had the same luck.
Just as well, now that I think about that sourdough bread right out of the oven ... and now I wonder why thoses were the 'fat years'.
