Do you have access to Lidia's Italian Table by Lidia Bastianich? At pages 62-63, there is a recipe for Minestra di Funghi e Patate. The recipe includes porcini and assorted wild mushrooms, potatoes and other vegetables, and barley. I would include the recipe here but the directions are 2 pages long and it would take me forever to retype. (I could copy and mail it to you, if you like). The recipe does not look difficult to make; she just has very detailed instructions.

Thanks, Mary. I will look for this book and it sounds like the ingredients that were in the zuppa. Except maybe for the potatoes...
Anyway, if I can't find it, I'll post again and let you know. It would be very kind for you to mail it to me, but let me try to find it first.

I don't want to tread on copyright laws so i didn't copy it but if you go to www.foodtv.com you'll find a very interesting mushroom soup from Tyler Florence with roasted fennel and chestnuts. Just go to the site and type in mushroom soup for your search.
