I'm far from being a "great" cook, but I was seriously considering ordering again from Howard Case at Casa de Case. This oil is from Frantoio Olivestri in Umbria. I got the 5-liter tin, poured it into little 4-oz containers, and put it into the freezer--just like Deborah taught me to do!

I surely understand the idea of using fresh olive oil, but I'm not sure that, if you actually buy fresh olive oil every year, I consider 10 or 12 months old olive oil less interesting than the new one... I think that, up to certain limits, olive oil matures, changes like wine, doesn't necessarily go bad...
Using the Find function I found this thread where Deborah first talks about freezing new oil to maintain that just picked flavor. I believe she's had much success with it since then.

I freeze fresh olive oil in little containers, take them out one at a time and put in refrigerator (where they soften), and then they are ready to use a minute or two out of the refrigertor. Fresh and still green and almost as spicy as new!

What I like about the olive oil from Casa de Case (http://www.casesf.com/CasaDeCase/Newsletters/Newsletter_November_2005.htm) is that it gets air-freighted here the week after they do the crush in Italy, so there is the experience of immediacy, tasting the difference from year to year -- fruity or bold or peppery and always such a great green flavour. Since we don't own our own olive trees, like some people posting to this site, this is the closest we can get to having olive oil fresh off the press. I've had some great service too, correspondence with Kristina Case, obviously a wonderful cook, and she's shared with me an Italian white bean salad recipe (using lots of olive oil, of course) that we are now addicted to. We are now a 10-litre per year family.
We also would recommend Casa de Case. We have been enjoying their olio nuovo from Olivestri each year for several years now, and always look forward to the first taste of the new oil. It also mellows beautifully.

Maybe you'd like to tell us a little bit more about yourselves, B and J NE and Janie&Geoff, how you discovered Slow Trav and what your travel plans are. I am so excited; just got a e-mail from Mauro Colonna, Le Case Gialle, that my olive oil is being shipped. All his oil is certified organic DOCG, and is soooo wonderful.

Charity, we leave on April 28th STL to FCO via LGA. Sadly, we only have two weeks for this trip. Have to return on the 14th. We go to a little borgo called Montemigiano - just outside Umbertide. Too small to be on a map. The seven houses in the borgo are all partnership based vacation houses. No rental. However, we usually try to take a 2-3 day mini-trip in the middle to visit some other area of Italy. Haven't decided where that may be yet for this trip. Although I'm hankering to go back to Naples.

We just had our third post about Casa de Case olive oil - each from a first time poster (I deleted this last one). Me thinks some of these are posts from people with the company.
I opened the door this morning to get the paper and my oil was on the front porch. I guess it was delivered yesterday and I didn't notice it when I came home last night.! Yeah! I really didn't want to be gone when it was delivered. We left this morning for Vegas. I'm typing this from our hotel room. Tomorrow night is a new fish restaurant we heard about. Then Saturday night is my favorite Thai restaurant. YEAH!!! Sunday is the Italian place out at Lake Las Vegas, and Monday night will probably be Z Tejas. I'm one of the few people who comes to Vegas to eat instead of to gamble. Shannon....what happen to you coming over for the weekend?!?!
