"Scovazzume" is literally the dust and dirt you remove from the floor with a broom. In this case it refers to food leftovers in too tiny amounts to be used otherwise. So I had 5 small boiled Brussel sprouts and a tiny bit of thinly sliced pancetta, about two paper-thin slices, and a small piece of leftover gorgonzola, that once cleaned of the overripe crust and yellowed parts was about one inch when measured over the longest side (I was eating alone). I broke the pancetta up and placed it in a heated nonstick pan, letting it wither, the fat dissolving. I added the sliced sprouts, sautéed until they got warm enough. Then I added the cheese, cut in several really tiny cubes, and a little bit of milk. I stirred until the cheese was melted and the sauce slightly thickened. Added a bit of freshly ground black pepper. Meanwhile, I started the water boiling, when it reached the boil added the salt and about 90 grams of penne, drained them when al dente and dropped them in the pan with the sauce, sautéed for a moment and there it was. Delicious. And budget!
Ever since you first posted this word a year or so ago, it has become my favorite word!!
Many times Judith will ask, "what's for dinner?" and my reply is "SCOVAZZUME!!".
And, like you, I come up with stuff that is delicious from an empty frigo! 1/2 a pepper, a few curled mushrooms, some lefover broccoli and 1/2 a package of cream cheese can become a great little pasta primavera.
