My sister made this salad and I have adopted it as a favorite. It's simple and the flavor combinations are really good. It makes a nice change from fennel and oranges.

Slice a bulb of fennel, add a chopped apple (peeled or not, your choice), some walnuts and some small pieces of Parmigiano Reggiano (use that pointed cheese tool to chip pieces off a block of Parmigiano). Dress lightly with olive oil. Pig

I have to admit I have never tried fennel because I do not like the taste of licorice.

Another variation on the fennel/orange one is fennel/orange/radicchio.... adds a bit of bitterness to it!

Paul made a great salad a few months back with fennel, apple, blue cheese, and pecans. It was amazing. The recipe is on the blog here.
