We attended the wine festival in Greve and joined a line to purchase a sandwich at Nerbone outdoor cafe. The sign said "PANINI LAMPOFREDINO O'BOLLIO" The chef prepared each sandwich with great care but we didn't recognize the ingredient. It looked a little like lungs from a pig maybe. Can anyone enlighten me?

to be precise it is the last of the 4 stomachs and my prefered one, a lot more tender than the white tripe we are used to seeing in the states that feels like eating rubber bands!
Nerbone is famous for these, they are in the Piazza in Greve and also in the Central MArket!

Both Cibreo and the trattoria at Cibreo makes a wonderful minnestra di Lampredotto where the tripe is just so tender and in a tomato spiked broth. I loved it. I seem to recall their putting a sprinkling of cheese on the soup.
