Inspired by the recent posts, we made this Sunday and ate it last night. What a great recipe. My husband is going on an annual office retreat in two weeks and plans to make this dish.We can't decide what vegetable or side dish, other than rice, he should make. He's not a great cook but this dish will free him up to make a more difficult side. Any suggestions?

I hate to admit it but I used to own three of the Silver Palate books and gave them away. Now I regret it.

I love it with mashed potatoes and a crisp green vegetable, like broccoli sauteed with pine nuts.

Mashed potatoes are awesome with it. But if you want something different, how about orzo? Or maybe even polenta? For a vegetable, I love sauteed greens - spinach or something a little different like mustard greens.

You'll have to look for some replacement Silver Palate books at used bookstores!

how is exactly made CHICKEN MARBELLA?

Anyway,I was wondering about a vegetable cream,like a leek cream,or a broccoli cream.And also cauliflowers wrapped with a pork "snare" and sauteed with garlic,laurel EV olive oil

Since I no longer owned the book that contained the recipe, I googled it and the Silver Palate recipe was the first result. Try that. It's so easy. I just had a piece; it seems to get better each day.

A great side is sauteed swiss chard with a little fresh garlic and olive oil. Also, an easy one is asparagus with pesto and proscuitto. Take the asparagus and steam for 3 minutes. Take slices of the proscuitto and "butter" them with the pesto and wrap them around the asparagus like you're rolling a cigarette. Place them in bundles of 3 or 4 and cover with parmagiano reggiano and put under the broiler until the cheese brown. Boy they're good!

Hello this is my first time on this site but... I've been making Chicken Marabella for years! Garlic mashed potatoes along with peas or broccolini ,shallots/garlic and proscuitto go really well with it. I have made chicken marabella for as many as 35 to 70 people ,served it warm in a chafing dish and used my tortellini salad( not the standard one most people think of) as a side dish. Served this 2 weeks ago for 70 people at a fundraiser and all we had left was 4 pieces of chicken. Everyone wanted the recipe.

Thanks so much for your replies. I guess it's mashed potatoes for sure and some kind of green vegetable, depending on what looks good at the grocery.

This website is so great. Whether it's travel, books or food, I have found answers here.

I just Googled for the chicken Marbella recipe and found that it was very similiar to one that a friend had given me...one that I had named "Belinda's chicken". Now I know where the original idea came from....thanks for educating me!
