In another thread, Pauline mentioned bringing a flame tamer to italy because the burners won't go low enough to simmer rice for the 15 minutes or so we need to make "American" style rice. what exactly IS a flame tamer, and can I get one in Italy, or will I have to add it to my list for May?

Flame tamers are available here too, I buy them to put under my ceramic pots I cookwith. in Italy they are called a spargefiamme.

Mine look like iron netting.. in a ring..they may even have the heavier iron ones too

I've gottenr eally good at jiggling the flame knob between high and off to lower the flame to a whisper.

I've also read that in a pinch you can piggyback one burner "grill" on top of another, which effectively raises the pot further from the flame...you would have to be sure that it was stable though, which could be tricky!
