Buffalogirl, Fortunately, in your climate it is easy... no humidity. If you have the bush, pull the whole bush from the ground, roots and all. Wash off the dirt from the roots and hand it upside down by some string, to let them dry out. By doing it upside down, the moisture from the plant remains in the upper reaches to allow the plant to dry properly. This method is used for dried flowers as well. Sunlight will damage the color so be careful on that end. It is better out of the sun but in a dry dark place. Eventually the plants and peppers will dry off. Once dry, you can use them whenever you want. I have done flowers, basil and all sorts of other dried items like this. Yes, I lived in Florida now and can no longer do it but I live in Rochester for 15 years where I did all this. Buona fortuna!! Doug

My only suggestion is to wash your hands thoroughly with a grease-cutting soap after handling the peppers, and until you do, don't rub your eyes!

I will never forget to wash my hands carefully before going to the toilet after preparing chillis.  . Once was too many times. Warn any male members that might help you.
