I want to make some pesto and am curious about the cheese input. I have some romano and some fiore sardo, which of the two pecorini should I use? At what ratio to the parmigiano? Grazie Smile

ratio should be 1:1, and personally I would use the less salty of the two, which should be the fiore sardo.
