Pauline mentioned enjoying this type of squash in the group blog last month, so when I saw it at Whole Foods today, I bought one. But now, what do I do with it?

Roast?
Steam?
Puree?

Help.

Kim,
I had to google Kabocha to see what it was like and I came across this recipe:
Kabocha Spinach Soup

I also read that you can use it in any way that you would use pumpkin or other winter squashes. I wonder how the flavor differs.... let us know.

I just got an email from Allrecipes.com where Kabocha squash was the featured veggie. I'd check there for some good recipes.

I ended up slicing it in half, and baking it at 350 (cut side down) for 30 minutes, then turned it, sprinkled one half w/ some brown sugar and drizzled maple syrup on the other half and baked another 25 minutes or so. Both were good Smile.
