This is a soup that I traditionally make for New Years. It includes black-eyed peas (for luck) and greens (for wealth). I once made it for 100 people for a New Year's brunch. Served with corn muffins, of course.
New Year’s Day Soup From Southern Living Home Style Cooking
1 cup diced smoked lean ham 2 celery ribs, chopped 1 medium onion, chopped 2 carrots, chopped 2 garlic cloves, minced 2 (15 oz ) cans black-eyed peas, undrained 2 (14 oz) cans low-sodium fat-free chicken broth 1 (14 ½ oz) cans no-salt-added stewed tomatoes, undrained 1 (14 ½ ) cans no-salt-added diced tomatoes, undrained 1 (8 oz) can tomato sauce (I use about 4 oz) 1 ½ cups chopped spinach or other greens ½ cup chopped fresh parsley ½ tsp pepper Saute first 5 ingredients over medium heat until vegetables are tender. Stir in black-eyed peas and next four ingredients; bring mixture to a boil. Cover, reduce heat, and simmer 1 hour and 30 minutes. Stir in 1 ½ cups spinach, parsley and pepper. Yield 10 cups.
I throw in 3-4 small peppers from the pepper sauce jar and a few dashes of hot sauce during the simmer.
