This is another string to add to Ursula Ferrigno’s ever broadening bow for Italy Sea to Sky is a marvellous evocation of the food of Italy as seen from the vantage point of Italy’s coasts, mountains, rivers, forests, plains and islands. This is the third book of Ursula’s published by Mitchell Beazley and it is pure Italian bravado.
The recipes are faultless, well tried and tested and take in fish to breads, to pasta to desserts. They sing with an abundance of flavour, are good looking and delicious – Italian true to form. Special mention must be made of Jason Lowe’s extra special photography, which push the pictures of cooked dishes well into the super model league.
All the recipes are simple Italian fare where geography has always played an important role in the local styles of cooking. Northern diets tend to rely more heavily on carbohydrates while in the South, vegetables are very much part of every day life. You will be pleased to note that all the ingredients called for are easily obtainable. The one exception is that Ursula does use Italian 00 flour, which makes for a crisper finish in pastry. You can buy this from good Italian delis.
What we like Lemon pesto is to become a regular feature this summer. It is a punchy mix of garlic, pine nuts, olive oil, basil and parmesan and is excellent with barbecued chicken, steak and roasted vegetables. On the subject of barbecues, we like cubes of polenta roasted with vegetables and dolcelatte on skewers. Fennel baked in garlic and gorgonzola makes an easy supper dish. Just steam some fennel, cook a whole garlic in the oven until soft. Squeeze out the flesh and mix with cream and the cheese. Layer this mixture with the fennel and top with toasted breadcrumbs. Cook until bubbling and golden.

Thanks Gavin. It sounds wonderful. My local library has a copy of another book by her, "Truly Madly Pasta". I'm going to reserve it to try some of her recipes.

Correct me please, but I've been told that lemon sauces, like the wonderful dish made on the Costiera Amalfitana, should not use cheese, just like shellfish sauces. Wondering. Pat
