We spent part of a day in Carrara in Sept 2001, driving up to the Fantiscritti marble museum (very interesting) above the town. We drove back into Carrara proper at lunch time and couldn't find a single restaurant that was open. The city seemed rather forlorn, from our brief impression. My TCI guide doesn't list any hotels or restaurants for Carrara proper. My impression is that visitors stay in Marina di Carrara, Marina di Massa, Forte dei Marmi/Viareggio or even Lerici, which is not more than 20 minutes away. Forte has lots of hotels, even some 5* hotels, and a great market on Sundays. Found this site, might help, good luck. http://www.massacarrara-live.it/index.php
