Hey we just visited Spoleto and found a great restaurant in case you want to check it out... Osteria del Trivio Via del Trivio 16 06049 Spoleto Tel: 0743-44349
The owner's name is Umberto and he's quite a host...we had one of our best meals in Italy in this place...his wife cooks and it's superb! It's more or less what they cook that day...so you can try things you normally wouldn't.
Umberto is great! And the place is adorable..typical Italian osteria right off the main drag up the hill from the center of town.
They even have a guitar player in the evenings and Umberto said it gets hopping there after dark.
Oh, I did see some 3 star hotels at the very top of the hill...(beautiful views) but I don't remember the names...they were about 65 euros per night and looked nice...you might want to check out the locations of some of the ones you've seen. This location is perfect..it's not far from the famous church there.
