Hello All!

Wanted to see if there were good suggestions as to what you cook while on holiday in Italy? Our daughter has a severe food allergy to peanuts and tree nuts so we typically eat in for breakfast and dinner with either a picnic lunch or if we feel comfortable that a restaurant can accommodate her food allergy, we may eat out. We'll be in Italy in June and July, so there should be an abundance of fresh veggies and fruits! Typical meals that we cook are: pasta, pasta & more pasta! Although when we were in Umbria the meats were incredible, so we grilled often!

Our home base for this trip is Lucca with a few days in Rome - can't wait!

When we travel and have a rental, we often like to eat out at lunch and then relax back at apartment/house with wine, cheese, salumi, bread, olives, etc for supper.

I love meals like the one Keith describes, an assemblage of various delicious bites. I like to pair meals like this with a fresh salad filled with greens, tomato, onion, a simple vinaigrette dressing and a dusting of Parmesan.

For dinner I'm a big fan of pasta as well, but when my friend and I were in Italy and had had enough pasta to last us a life-time my next two top picks would have to be Pizza and Risotto. I have a soft spot for mushrooms and at this Agriturismo we stayed at in Le Marche Lisa (the owner of Lavanda Blu) cooked a mad Risotto con Funghi. I've taken a liking to it ever since and she even posted the recipe on her food blog: http:/lifeintheitalianhills.com/risotto-con-funghi/

Its easy to make and feeds a whole family for sure.

summer is so easy here,

we virtually live on caprese salad, you can buy fresh mozzarella everywhere in Italy and delicious tomatoes

As an easy meal we love frittata

For pasta, may I suggest pesto and broad beans , tuna and cherry tomatoes, and the classic puttanesca

And as there is actually life beyond pasta, you could try these recipes, all ready within light speed time
Balsamic peppers
Saltimbocca the Umbrian way
beef straccetti
zucchini carpaccio (omit nuts and drizzle with artisan honey instead)

The discussions in Judy's linked pages take me back to Italy in spirit!

I remember shopping in the small stores in Italian villages, and, to a lesser extent, in small towns in the south of France. So memorable and fun. The kind of adventures we should all hope to experience.

I'm ready to return, just after I get packed!

I am going to print these out & take with us. My daughter has increasingly become interested in cooking and preparing food so she too is very excited by these suggestions!
