Does anyone know what will be open in Venezia Easter Sunday and Monday after? Any suggestions
as to what to do those 2 days?

Everything that is usually open, will most likely be open. Both days are jam-packed with travelers. My suggestion is, stay out of Rialto and Piazza San Marco during the middle of the day (go early in the morning, or in the evening) and get off the beaten path. You'll have no problems finding open bars and restaurants.
