As far as I know, EVERYTHING is open in Venice on a Sunday :-) Seriously, Venice thrives on it's tourism and things will be open. Museums certainly will...if they close, they will be closed, I would think, on a Monday. Grocery stores may not be open...maybe very, very off-the-beaten-path restaurants? The shops will be open. I wouldn't worry about it in such a tourist destination :-) have fun!
Yes, museums are open on Sundays. Churches, of course, have limited hours for visits on Sundays since they hold mass. Many, many stores are open although the ones still catering to locals tend to have Sunday as their closing day. Of the 3 or 4 supermarkets I've used in Venice, most close but the Billas are open, and I think the large Coop at Piazzale Roma.
As for Burano, that could be a good choice. My only caveat is that friends visited Murano on a beautiful Sunday a few years ago and found their were lines for the return vaporetto trip since many others had the same idea. My impression is that this is less likely from Burano.
Sunday is a fairly popular closing day for restaurants, but oodles remain open. Pizza on Sunday night is popular with locals.
