Frittele! You are killing me, I love these... anyone who goes to Venice for Carnevale MUST eat as many as possible, preferably from the kiosk in Piazza San Marco accompanied by vin brule.

Mmmmmmm.....

The ones filled with ricotta sound heavenly.

A few years ago, we enjoyed a somewhat similar treat at Vini da Gigio, a restaurant we've enjoyed several times. It was Crema Fitta. When I asked what it was, the waiter said it was "fried cream." I had a hard time suppressing my smile and ordered it. It was "fried cream." The cream must have been a firm vanilla pudding, as firmn as cold polenta, cut into a square, deep fried and sprinkled with granulated sugar, served warm. If it is still on their menu and you have room for dessert, I recommend it.

I believe they call it Frittole. THere are three versions, plain, with raisin and with custard.
